Nutrient Packed Ramen Bowl

Dried, packaged ramen noodles are definitely a pantry item I pretty much always have. As far as I know, they never go bad (or it would take an extremely long time for them to) and each package costs maybe 60 cents. I used to just pop them in the microwave and call it dinner, but I am older now which means I need to make it a little more substantial.

To do that, I like to add lots of veggies and a protein of some sort, but I also like to make a really hearty, nutritious broth for the noodles. This type of broth is also great because you can use up some things in your fridge, anything goes for the most part.

Below are the ingredients I used to make my broth

Freshly diced ginger

Freshly diced garlic

Turmeric

Curry powder

Chicken & beef stock (using up open things in my fridge)

Gochujang

Sriracha

Clam juice

Water

Fresh lime juice

1 ramen seasoning packet

Combine all of the above ingredients, and let that simmer for at least 20 minutes for everything to come together. The longer you have, the better. There are so many great ingredients in that broth - ginger is good for digestive and immune health, garlic is basically a heart-health superfood, and turmeric has been shown to be beneficial for so many things - your immune system, your cognitive health and even can improve your overall mood. I love using ingredients like this in broth and soups, you don’t even realize how healthy you are being!

Once my broth was ready, I added in the dry noodles along with shrimp that had been marinating in

Oyster sauce

Soy Sauce

Lime Juice

The broth will cook everything in a short amount of time - just about 5 ish minutes. I added some baby bok choy for just about 1-2 minutes so it could wilt slightly.

Time to plate! This is where you add in all of your other veggies, pick and choose your favorites. I finished my noodle bowl with the following:

Thinly sliced radish

Raw jalapeño

Steamed sugar snap peas and baby carrots

A jammy, soft boiled egg

Spring onion

Finish with a squeeze of lime and some freshly cracked black pepper. This is filling, makes you feel good about what you just ate, and is inexpensive… what could be better?
